Buy Febreze Laundry Odor Eliminator (with the laundry product additives and usually on the bottom shelf- blue bottle).
Put a cap full of the Febreze into a bucket of water - cold if the cap is dark and let it soak for about 30 minutes.

Best way to wash hats is in the dishwasher. Just don't use dishwasher detergent with it because it will bleach out the fabric. Before washing soak it in a gallon of water with half a cup of vinegar then proceed with hand washing it. Let air dry.
